Ceremonial grade uses the youngest, shade‑grown leaves (first harvest). It has a delicate, smooth umami flavor with very little bitterness — best for drinking as tea. Culinary grade is slightly more robust, with a stronger flavor and vibrant color — ideal for lattes, smoothies, baking, and recipes.
